Fish story

Several years ago, a friend and I did some night fishing.  We arrived at our chosen spot just before nightfall, anchored, setting up our lights.  We had our bait, nets, fishing gear, and plenty of food.

We were fishing for Crappie. (Pronounced croppy)  A special fishing pole is needed to catch them, because their bite is so light.  After a few misses, we started catching fish after fish.

After several hours fishing our bait was gone, but we had artificial lures.  So we switched to artificial lures.  We continued to catch one fish after another, until we were too tired to fish any more.

Up came the anchor.  Loading our fish in the boat, we proceeded to the ranger station to check out.  There was no limit on the amount of fish we could catch, but they had to be weighed.  The fish weighed in at a little over a hundred pounds.
It was almost dawn, so we packed the fish on ice, heading for home.

After a few hours sleep, we started the process of filleting them.  We packed the fillets in clean milk containers, filling them with water, placing them in the freezer.
We kept enough out for a big fish fry.

Over the course of several months, we would have another fish fry.  It was sure nice to thaw out the containers, having a big fish fry.
My mother-in-law wanted to have a big fish fry at her house.  She asked me to provide the fish.  I said that I would be glad to provide the fish.  So, packing up an ice chest full of milk cartons, I took them over to her house.
My family made all the compliments for having fish.  I sat up everything for frying the fish, getting everything ready for seasoning the fish.
Once the containers thawed sufficiently, I opened the milk container to take out the fillets.  Water, nothing but water.  I opened the second, water.  Opening every container there was nothing but water.

Did I tell you that I also froze water to make ice for home made ice cream?
I don't think we had a fish fry that night.

Bet you thought that this was going to be a recipe for frying fish.  Sorry.

The only thing I do to fry fish is:

Cut fish into 1-2 inch pieces
Place nuggets into bowl or plastic zip lock bag.
Lightly sprinkle with Kosher or Sea Salt to brine for at least one hour
Rinse the fish, placing on paper towels, patting dry
Roll fish nuggets in a mixture of flour, corn meal, seasonings desired
Fry in hot oil.  Fish are done when they float.


Here is a recipe that might be useful.

Special Fruit Salad

This fruit salad is quick, easy, and fun to make.  Hint:  It is better second day.

Mix in bowl:

6-7 sliced medium bananas
One large can fruit cocktail, drained
2 small cans of mandarin oranges, drained
1 large can pineapple chunks, drained
1 can of Apricot pie filling  (This is a must)
1 Tablespoon of lime juice (prevents bananas from browning)
Stir completely, cover, chill, serve after chilling

Note:  This makes a big bowl of fruit salad, suitable for Pot Lucks or family gatherings.
